Items that you delete from your Zune are automatically skipped during sync. You can also mark an item in your Zune software collection to be skipped during sync.
Skip items from sync
In your Zune software collection, right-click an item and click Never sync with <device name>.
Restore skipped items
If you drag a skipped item to the device icon, the sync restriction is removed and the item will sync again.
